People need to reach adequate and reliable food to live, to achieve physical and mental development. Considering that food from animal origin has an important place in healthy nutrition, veterinarians have important duties in order to ensure reliable food production. The main domain of the Food Hygiene and Technology Division is the production and delivery of animal origin foods from farm to table in all stages in high quality and safe.

The primary goal of the Department of Food Hygiene and Technology is to be able to give the necessary, current and basic information theoretically and practically to undergraduate students in food hygiene and control, meat science, milk science, meat hygiene and inspection, milk hygiene and technology, food chemistry and veterinary public health. In addition, our department trains experts in the field with post-graduate education and provides scientific development through research activities. The department conducts research on topics such as food microbiology, food chemistry, molecular genetics, food production technologies, risk analysis, public health, food residues and contaminants.

Courses on food hygiene taught by the faculty who gave courses in Emraz-i Sariyye and Bacteriology or Cerrahi-i Marazi under the name of Inspection-i Lühum until 1921, military and civil veterinary schools merged and the Faculty of Veterinary Faculty of Ankara University on 25 December 1951, with the decision taken in accordance with the 6th and 37th points of the Law No. 4936 of the Universities and the establishment of the Food Control and Hygiene Chair, it is now started to be given in this branch. From this year on, Prof. Dr. Latif BERKMEN, Prof. Dr. M. Hayri KARASOY, Prof. Dr. Nahide KARAMIZRAK (ÖZGÜMÜŞ), Prof. Dr. Dr. Cemal OMURTAG, Prof. Dr. İlhan ÖZER, Prof. Dr. Prof. İrfan TEZCAN, Prof. Dr. Dr. Mehmet Aziz DEMİRER, Prof. Dr. Dr. Zeki TOLGAY, Prof. Dr. Ahmet YURTYERİ, Prof. Dr. Ergün ÖZALP, Prof. Dr. Dr. Şerif KAYMAZ, Prof. Dr. O. Cenap TEKİNŞEN, Prof. Dr. Burhan DİNÇER, Prof. Dr. Bülent MUTLUER has been involved to academic personnel of the deperment.

Dr. Sadi AKGÜN received his Ph.D. from Nancy University in between 1973-1978 in France, completed his doctorate studies in 1979 and was appointed as a lecturer in the department and continued his teaching career until 01.08.2009 when he was retired. İrfan EROL was appointed as an research assistant to the department on 14.02.1986 and went to Germany on 01.04.1987 to make a doctorate with the German Academic Exchange Service (DAAD) scholarship. Prof. Dr. İrfan EROL was appointed as General Manager of Food and Control Ministry of Food, Agriculture and Livestock in 2012 and left the from the department. Currently, T. Haluk ÇELİK, Belgin SARIMEHMETOĞLU (YARGULU), U. Tansel ŞİRELİ, Özlem KÜPLÜLÜ, Haydar ÖZDEMİR, Muammer GÖNCÜOĞLU and F. Seda BİLİR ORMANCI are working as professors at the department. Dr. Güzin İPLİKÇİOĞLU ÇİL and Dr. Bahar ONARAN are working as research assistants in academic staff of the deparment.

According to the Council of Higher Education (YÖK), which is dated 22.09.1982 and numbered 3939, the chair of the Department of Disease and Clinical Affairs was named as Department of Food Hygiene and Technology as in mentioned in the regulation numbered 2547 and article 7-d/2. According to article 7/d-2 of the Law No. 2547 and Article 3 of the Law No. 2809, which are announced by the Council of Higher Education’s dated 08.06.2005 and numbered 1342-011853, Food Hygiene and Technology is structured as a department. With the decision taken on 07.01.2010, department names were changed to ‘Food Hygiene and Technology’.

In 1980, the Milk Unit of the Food Hygiene and Technology Department was established.

In 1991, the Meat Unit of the Food Hygiene and Technology Department was established.

In 1995, the PCR Laboratory of the Food Hygiene and Technology Department was established with the GTZ Project, numbered 95.9153.8.00.100.

In 1999, the ELISA Laboratory of the Food Hygiene and Technology Department was established.

In 2006, the Molecular Food Microbiology Laboratory of the Food Hygiene and Technology Department was established.

In 2012, the second PCR Laboratory of the Food Hygiene and Technology Department was established.
